Our new restaurant “West Coast” – a modern bistro with a market hall atmosphere, featuring the very best of the west coast’s ingredients – opened on Friday 24 August. Most of the ingredients prepared here come from the Gothenburg region, and the focus is on promoting the exquisite tastes of these ingredients in an exciting way.
“West Coast is a declaration of love for the west coast,Swedenand our incredible selection of ingredients,” explains Krister Dahl, Executive Chef atGothiaTowers. “We choose ingredients from some of the region’s top producers. For example, we have world-class shellfish here. At West Coast, we want to pay tribute to those small-scale suppliers who share our values and stand for sustainability, environmental awareness and conscious choices.”
The menu includes organic mussels from Mollösund, and cod and plaice from WWF green-listed stocks. The ox cheeks – which are braised in stout and served with celery purée, fried onion and currant jelly – come from Ölanda Säteri farm, and the slow roasted belly of pork – served with sausage, sour vegetables and crispy potatoes – comes from Stommen Long.
West Coast seats around 70 diners, and as well as regular tables also offers social dining at a “group table” – a long table that seats 12 – and a food bar where those who are eating alone can also feel at home as they enjoy the fine west coast cuisine. A shellfish aquarium, an oyster staircase, and meat and fish counters all add to the west coast atmosphere.
Krister Dahl is Executive Chef at GothiaTowers, and has been captain of the Swedish Culinary Team since 2005. He is the only chef in the world to have won three gold medals at the Culinary Olympics, and will be training the Swedish team during the autumn in preparation for the 2012 Culinary Olympics in Germany this October.
